Yesterday was a super fun day. I started things off with a enjoyable humid 9 mile run… how could the day possibly be bad? It was also my half birthday. Yes I complain about how old I am, but I also love celebrating. Specifically celebrating me. So in honor of my half birthday (27.5) and an impromptu half day at work Monday (thank you spontaneous power outage), I made myself some yummy eats.

Tuesday: July 21st, 2015
Breakfast: 8:00AM
Green Apple with Cinnamon and a TBS of PB2
Not pictured: chocolate Vega protein smoothie with almond milk and ice… desperately needed something cold post 75% humidity run sauna.
Lunch: 1:00PM
1 spaghetti squash, 2 TBS homemade pasta sauce, 1 TBS nutritional yeast – this is a huge treat to myself. Not a complicated meal, but still time consuming enough to make me not want to make it regularly. Which is sad. Because this was delicious. I think I’m going to start having to eat this more….
Not pictured: 1 cup brussels sprouts… because they were delicious and I wanted to eat them ASAP. Also they smelled and people were giving me looks…
Snack: 3:00PM
Watermelon. Mid afternoon pick me up. Trying my best to avoid snacking on the granola, chocolate covered pomegranate seeds, and BarkThins they have at work by bringing my own sugary treat. TOTALLY not the same. WAY better for me and running.
Dinner: 4:30PM
“Dinner” was consumed rather quickly as boyfriend and I were taking a cooking class at 6PM. I ended up grabbing an Acai Bowl from Green & Tonic before hitting the road. I wasn’t sure how bad traffic would be, and definitely did NOT want to go into the cooking class #Hangry. It was absolutely delicious and totally hit the spot. However I ate it while driving so there’s no picture. Safety first : )
The class was an absolute blast and I promise promise promise I will share more with you soon!

Have you ever taken a cooking class before? We learned how to make pizza from scratch (dough and sauce too) which was a ton of fun. I can’t wait to share what we learned last night with you!
Can’t wait to hear about the cooking class! I’ve been cooking forever but haven’t taken one and I know I could learn a lot and it would be fun 🙂 I haven’t made spaghetti squash in ages, time to bring it back!

I’ve never taken a cooking class but have always want to do a sushi one! Guess I’ll have to wait on that 😉 I want that apple combo warmed up and served with granola! Apple pie baby! Maybe it’s just bc I’m cold at my desk right now, but it sounds delish.

YES for celebrating half birthdays. Why NOT celebrate it?! I don’t think I’ve ever taken a cooking class but I would love to (and probably need to).

You should make spaghetti squash in the microwave and you’ll be good to go in under 10 minutes. Just saying 😀

That is a great coincidence that you had a half day of work on your half birthday! I do not celebrate my half birthday, I don’t even think I notice it! I’m in no hurry to get older so it would just be a bad reminder.

Yum! Good day of eats! I’m going to do my first WIAW post later (after I eat everything… new to this whole WIAW thing! I celebrate my half birthday if I realize that it’s coming up! My real birthday is this weekend
I’ve never taken a cooking class but as Heather mentioned above, I want to do a sushi rolling one REAL bad!

I love spaghetti squash, and I am always happy when I take the time to make it on the weekends. But it can take awhile and get a bit messy!

That’s so cool you went to a cooking class! I absolutely love to cook, but Dan doesn’t even know most of the basics. I’ve been promising him that we’ll try one out sometime, so I’m excited to hear how the experience was! Happy Hump Day to you…and we’re one step closer to #weekend!!!!

Mmm I looove spaghetti squash. It is hard to make though, mainly the cutting in half part. I had popcorn and ice cream for dinner last night so that was probably the best thing I ate. Dinner of champs!

Best thing I ate yesterday was leftover stir fry for lunch- chicken, brown rice, broccoli, and some cashews.
My mom used to celebrate our half birthdays growing up but not anymore… maybe I need to bring them back 🙂
I haven’t taken a cooking class before but look forward to reading about yours! Glad you had a blast!

Ooh a cooking class sounds fun! I can barely get friends from all over the country/globe now together for my real birthday (which is actually Sunday this year, being celebrated solely with a quiet dinner with my parents because the bar starts Tuesday) but then again it’s fun to have friends all over the place to visit!

I love cooking classes, we just did one with some friends and had a blast. An evening in Thailand lol. That spaghetti squash with sauce and NY looks amazing!!! I’m so into NY right now it’s crazy. Thankfully it’s dirt cheap:)

Happy half-birthday!! (because I completely celebrate them too) Fun fact: My almost half birthday (5 months) falls on Haley Joel Osment’s birthday. When I was a young child who had a crush on him, this was the best news ever.

I always get judged for my brussles, too. They’re delicious, people! We just got a new kitchen store that is doing cooking lessons, so I’m hoping to get around to do one of those together soon! It sounds like a blast!

I love this post! Watermelon is the best snack and I’m pretty sure I eat spaghetti squash way too much. But it’s so good!!! I need to try that breakfast of yours.

That apple with cinnamon looks delicious! Best thing I ate yesterday was a peanut butter and banana smoothie after my run. It hit that post-run craving perfectly!

oh man can you teach me how to cook a spaghetti squash? I followed some tutorial and when I took it out of the oven, it spilt all over my floor. Like, burst. It was sad.

So sad! I heat in microwave for 5 minutes … take out… cut in half (makes it soft enough to not loose a finger while cutting)… scrape out the seeds… place face down on a baking sheet and bake at 350 for 25-30 minutes. I like cooking it in the over as opposed to the microwave because it doesn’t get as soggy (in my opinion!) Hope that helps : )

Ooh fun! I’ve never made pizza from scratch but I have taken a couple of classes…most recently, macarons! They are very challenging, but extremely delicious.

My half birthday is my brother’s birthday, and so my birthday is his half birthday! It’s a funny and cool way to “celebrate” a half birthday with someone else’s real birthday 🙂

That breakfast looks yummy. We had a team building cooking class at work a few years ago. It was fun but the food was a little impractical.

Spaghetti squash is so delicious! I used to nuke it in the microwave during my grad school years to have it ready without having to spend forever roasting it. I was totally that weird person warming up giant vegetables in the office fridge. Just stab it a few times to vent it, pop it in for 5-10 minutes, cut it open, and – ta da! – spaghetti squash!

Yay for spaghetti squash! That sounds awesome! I need to cook those more often…I’m so freakin’ lazy. Um, the best thing I ate yesterday was dinner…chicken tacos from the crock pot (again…lazy). I have not celebrated my half birthday in a long time, but I think I need to re-institute this practice. Happy Belated Half Birthday, Jamie!

Yesterday happened 2x for me, as I was in Taiwan for one Tuesday, and in LA for another Tuesday – so I have so much GOOD FOOD to choose from, lol! But I am probably going to say the salmon sashimi from my last dinner in Taiwan! 😮
And I have always wanted to take a cooking class, but it’s hard for me to find one worth it because of my food allergies!

Your food looks delish – I’m obsessed with watermelon this summer, so although your alternatives at work sound fab, I would pick the watermelon. I think that means I’m dehydrated. In no world should I want watermelon over anything chocolate covered.

well i don’t celebrate my half birthday but now i feel like i need to! always makes me think of Alice in Wonderland and the “very merry un-birthday.” like, just celebrate every day, right?! right. best thing i ate yesterday — we had a work party and there was a to-order guac station, and THAT was amazing. SO fresh.
